POMEGRANATE-GRANATEN-SCONES.

Für:

8 Scones.

Drin:
two cups flour
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter (i like it to be very cold, even frozen)
1/2 cup of pomegranate seeds
1/2 cup of half & half (or sour cream, heavy whipping cream, evaporated milk, whatever you have on hand)
1 egg


Machen:
– adjust oven rack to lower-middle position and preheat oven to 400 degrees.
– in a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. – – – grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in pomegranates.
– in a small bowl, whisk cream and egg until smooth.
– using a fork, stir sour cream mixture into flour mixture until large dough clumps form. use your hands to press the dough against the bowl into a ball. (the dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
– place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. sprinkle with remaining 1 tsp. of sugar. use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. bake until golden, about 15 to 17 minutes. cool for 5 minutes and serve warm or at room temperature.

SCHOKOLADENKUCHEN MIT BIER. UND OHNE ZU SÜSS.

Ein Bier, ein Kuchen, ein Traum!
So ähnlich bei 101cookbooks, sehr zu empfehlen dieser Blog im Übrigen.

Das Rezept versteht man auch auf Englisch. Das Stout habe ich durch ein Schwarzbier ersetzt. Hat super funktioniert. 

Das Meersalt erst sehr spät auf den Kuchen streuen, sonst versinkt es und ist weg.


Drin:

2 cups / 475 ml chocolate porter or stout beer
8 tablespoons unsalted butter, plus more for the pan
3/4 cup / 75g natural cocoa powder (non-dutched)
1 cup / 140 g whole wheat flour
1 cup / 125 g all-purpose flour
1 cup / 120 g muscovado or dark brown sugar
1 1/2 teaspoons baking soda
3/4 teaspoon fine grain sea salt
3 large eggs
1 1/2 cups / 355 ml plain whole yogurt
3/4 cup / 180 ml pure maple syrup

Chocolate Buttermilk Icing:

3/4 cup / 2.75 oz / 75 g powdered sugar
1/4 cup / 25g natural cocoa powder (non-dutched)
2 tablespoons buttermilk

Machen:
Preheat oven to 350F / 180C, with a rack in the center.
Butter and flour (generously) a 11 or 12-cup capacity bundt pan (or equivalent). As I mention up above, you can bake this in other cake pans, just be mindful to avoid filling the pan(s) more than 2/3 - 3/4 full. Adjust the baking time as well - baking until the cake begins to pull away from the sides of the pan, and the center tests clean when you insert a knife.

In a saucepan simmer the beer down to 1 cup / 240 ml. Remove from heat, add the butter and stir until melted. Stir in the cocoa powder, mixing until smooth, then set aside to cool, stirring occasionally to let off heat.

In a medium bowl, whisk together the flours, sugar, baking soda, and salt. Set aside.

In a large mixing bowl, combine the eggs, yogurt, and maple syrup. Whisk well, until nicely blended and uniform in appearance. Gradually add the (cooled) stout mixture, stirring all the while. Stir until well blended. Add the flour mixture, folding until just blended, using as few strokes as possible.

Transfer the batter to the prepared pan and bake for 35 - 45 minutes if using the bundt pan, or until a knife inserted in the center comes out clean. You really don't want to over bake this cake - err on the slightly moist side if anything. Remove from the oven, and turn out onto a cooling rack after seven minutes.

In the meantime, make the icing by whisking together the powdered sugar, cocoa, and buttermilk. Really go at it for at least a minute. The icing should end up smooth and creamy looking, adjust with a touch of powdered sugar or a few extra drops of buttermilk if you want to tweak the consistency at all. When the cake is completely cool, run the icing around the top with an offset spatula and let it set.

WALDMEISTER-PARFAIT.

Für:
4 Portionen

Drin:
150 g Vollmilchjoghurt
2 El Zucker
8 El Waldmeistersirup
250 ml Schlagsahne
1 reife Mango
3 El Zitronensaft

Machen:
1. 150 g Vollmilchjoghurt, 2 El Zucker und 8 El Waldmeistersirup verrühren. 250 ml Schlagsahne mit den Quirlen des Handrührers steif schlagen. Vorsichtig unter die Joghurtmasse heben. Eine Auflaufform (ca. 25 x 15 cm) mit Klarsichtfolie auslegen und die Sahnemasse einfüllen. Mind. 3 Std. einfrieren.

2. 1 reife Mango schälen und das Fruchtfleisch vom Stein schneiden. Zusammen mit 3 El Zitronensaft in ein hohes Gefäß geben und mit dem Schneidstab pürieren.

3. Parfait 15 Min. vor dem Servieren aus dem Gefrierfach nehmen. 10 Min. antauen lassen, dann in 8 Würfel schneiden und mit der Mangosauce servieren.

CHAMPAGNERGELEE MIT MUSKAT-SABAYON.

Für:
6 Personen

Drin:
7 Blätter Gelatine
750 ml Champagner
120 g Zucker
3 El Limettensaft
1 Pomelo
1 rosa Grapefruit
1 gelbe Grapefruit
2 Mandarinen
1 Orange
4 El Maraschino
130 ml Weißwein
1 Msp. gemahlene Muskatblüte
4 Eigelb (Kl. M)

Machen:
1. Gelatine in kaltem Wasser einweichen.150 ml Champagner mit 80 g Zucker und Limettensaftaufkochen, bis sich der Zucker aufgelöst hat. Abgetropfte Gelatine darin auflösen. Sud durch ein Sieb gießen, mit 350 ml Champagner auffüllen. Abkühlen lassen, mit restlichem Champagner auffüllen.

2. 6 Gläser (à 200 ml Inhalt) mit dem Champagner füllen, zugedeckt und kalt gestellt mindestens 6 Stunden gelieren lassen.

3. Pomelo, Grapefruits, Mandarinen und Orange so schälen, dass die weiße Haut vollständig entfernt wird. Filets zwischen den Trennhäuten herausschneiden, in eine Schüssel geben und mit Maraschino beträufeln, mischen und 10 Minuten ziehen lassen.

4. Wein, Muskatblüte, restlichen Zucker und Eigelb in einem Schlagkessel mit dem Schneebesen über einem heißen Wasserbad zu einer dicklich-schaumigen Creme aufschlagen.Anschließend im Wasserbad kalt schlagen. Mit Gelee und Früchten servieren.
